Savory Chicken Roll-Ups

Here is a recipe for Savory Chicken Roll-Ups that I read in our local paper and modified it to be healthier!
6 very thin organic chicken breasts
6 slices of Alpine Lace low-fat Swiss cheese
1 cup of bread crumbs (I used Ian’s gluten free)
2-3 TB of chopped parsley
1  minced garlic clove
10 oz. of no sodium added chicken broth
1-2 TB of canola oil
1 beaten egg
Preheat your oven to 375 degrees. In a small bowl mix together the bread crumbs and the parsley. Place a slice of cheese on each breast, roll up tightly, dip in the egg, and then the bread crumb mixture. In a large skillet, saute the garlic in the canola oil. Add the roll-ups and brown quickly, just enough for the chicken to have a crisp outer coating. Remove the roll-ups from the skillet and if necessary, drain on a paper towel. Pour 8 oz of chicken broth in a glass baking dish and place the roll-ups in the dish. Bake uncovered for 45 mins. basting half-way through with the remaining broth. Good enough for company!
