This next recipe for haddock I made tonight for dinner but feel free to substitute any white fish like cod or tilapia. Preheat the oven to 400 degrees. In a pan over medium high heat add 1 tsp. of extra virgin olive oil and saute 1 1/2 cups of mild salsa. Add a dash of Red’s Hot sauce and 1/2 cup of no salt added chicken or vegetable broth. Put as much haddock as you are serving in a glass baking dish and cover with the salsa mixture. Place tin foil over the dish and bake for 20 mins. So easy and delicious!
