Chicken Supper crockpot

As the days get colder and colder there is nothing like coming home to a hot chicken supper! My family loves this recipe and it is so easy to put it all in the crockpot in the morning and come home to a delicious and healthy dinner.

Chicken Supper

In your crockpot place 4 skinless chicken breasts. Then sprinkle them with 2 tsps. of dried basil, and salt and pepper to taste. Add a cup of diced yellow pepper ( I put the pepper in the Vitamix and puree it), a 15.5 oz can of no sodium added rinsed and drained cannellini beans, and a 14.5 oz can of no salt added diced tomatoes with basil, garlic, and oregano (I use petite diced tomatoes). Set the crock pot on low for 6 hours, cover, and dinner is ready. This meal serves 4 and goes well with rice, farro, or barley, and a green salad or whatever green vegetable you like.
