Swordfish

Here is a great marinade for swordfish that my friend gave me. Just remember to eat swordfish, King mackerel, or other fish high in mercury no more than once a month. In a large ziplock bag put all the following ingredients and shake to mix well. Then place the swordfish in the bag and marinated for 1-3 hrs. in the fridge, turning the bag over 1/2 way through.

 

2 TB of low sodium soy sauce
2 TB of orange juice
1/2 tsp. of lemon juice,
1 TB of  extra virgin olive oil
1 TB of ketchup
1/2 tsp. of oregano
1 clove of garlic, minced (I used the minced garlic in a squeeze bottle.)
1 TB of parsley
1/4 tsp. of pepper
Line your broiler pan with tin foil and broil 10 minutes on each side. I have also sprayed my outdoor grill with Pam spray and cooked the fish for about 8 minutes per side on a 350 degree grill. Fabulous!
